My dough feels too sticky - what should I do?

A slightly sticky dough is completely normal, especially for scones.

Lightly flour your hands and surface, and handle the dough gently — avoid adding too much extra flour, as this can make the final bake dense rather than soft.

My dough feels too dry or crumbly

This usually means it needs a touch more moisture.

Add a very small amount of cream, milk, or water (just a teaspoon at a time) until it comes together softly.

My scones didn’t rise as much as I expected

There are a few gentle things to check:

  • Make sure your oven is fully preheated
  • Handle the dough lightly (overworking can affect rise)
  • Place scones close together on the tray — they help each other rise

They’ll still taste beautiful, even if they’re a little flatter.

My brownies seem undercooked in the middle

That soft centre is actually what gives brownies their richness.

If they feel too soft:

  • Leave them to cool completely (they set as they cool)
  • Or pop them back in the oven for an extra 5–10 minutes

My brownies turned out too cakey

This usually happens if there’s a little too much mixing or baking.

Next time:

  • Mix just until combined
  • Keep a close eye on baking time

They should be soft, dense, and slightly fudgy.

My cookies spread too much

This can happen if the butter is too warm.

Try:

  • Chilling the dough for 15–20 minutes before baking
  • Making sure your oven is fully preheated

My bake feels a little different to what I expected

Baking can vary slightly depending on your oven, ingredients, and even the weather.
